Holiday USA West Coast Road Trip in Aug 2022: Day 3 – Richfield to Salt Lake City

Richfield to Spanish Fork

We left Richfield at about 6am and what a perfect start to the day!  We saw the sun rise over the mountains as we drove north and caught all of it on the GoPro 10.

Spanish Fork was our first stop where we could get our first decent coffee of the day, before pressing on for a proper breakfast stop in and around Salt Lake City. Due to the hour, it was fabulously quiet and we made really good progress, but it was pleasing to smell the coffee as we got closer to Starbucks.

We were at Spanish Fork for no more than 20 mins; enough to grab a coffee and plan the next stop.

We decided we would head to a well-reviewed breakfast place in Salt Lake City, which was easily accessible from the I15.

The roads started to get a little busier as we approached SLC but nothing too challenging.  It took us another 45 mins or so to reach the breakfast place that Vick had selected.

Roots Café offered Mexican and traditional breakfasts.  We had a 20 min wait for a table outside.  Outside looked picturesque.  Inside less so.  However, the breakfast was really tasty.  Vick went for the polenta eggs beni and I went for a Mexican rancheros dish with tortilla wraps (with some breakfast potatoes on the side). Lovely.
